Chocolate-Hazelnut Balls, Ferrero Style
A hazelnut center, a creamy ganache and a crunchy coating. Holiday indulgence, entirely plant-based.
This time we take on a true monument of indulgence: the inimitable Ferrero Rocher.
That little chocolate bite, with its hazelnut center, its irresistible crunch and its generous coating, is one of those treats you would recognize among a thousand.
So how do you recover all of that in a fully plant-based, gluten-free version, without sacrificing any of the pleasure?
I can tell you without exaggeration that I spent entire evenings, just as I was falling asleep, turning this question over. How to recreate that chocolate-praline crunch I love so much, the one you also find in iconic desserts like the Royal or the Trianon?

I had to find the right combination of ingredients — one that would recover the crunch, the richness of the hazelnut and that very particular texture that makes the Ferrero Rocher what it is.
And after many attempts, I think I can say I found a particularly successful one.
My secret rests on three key ingredients: Pain des Fleurs crispbreads with chocolate, hazelnuts gently toasted to bring out all their aroma, and a chocolate-hazelnut spread, chosen to your taste and ideally close to the flavor of a Ferrero Rocher.
Put together, the result is genuinely astonishing. You find almost exactly the flavor markers of that famous confection: the chocolate, the hazelnut, the melt and above all that characteristic crunch.
And what a satisfaction to find that pleasure again in a gluten-free, fully plant-based version, with ingredients you choose yourself.
That too is what fascinates me about plant-based pastry: searching, experimenting, understanding textures and discovering that you can rework great classics without giving up what makes them irresistible.
So it is with a great deal of joy that I give you this recipe today. I sincerely hope you take as much pleasure in making it as I took in working it out.
Ingredients
Makes 6 large balls
- 50 g Pain des Fleurs chocolate crispbreads
- 50 g toasted hazelnuts
- 140 g chocolate spread (your choice)
- 27 g deodorized coconut oil
- 6 whole toasted hazelnuts
- 100 g dark chocolate for coating, with some likely left over
Method
- 1
Blend the crispbreads. Separately, blend the 50 g of hazelnuts, the spread and the oil, keeping a little texture.
- 2
Combine the two preparations, knead, and refrigerate for 30 minutes.
- 3
Shape six balls, each with a hazelnut at its center.
- 4
Freeze for 30 minutes. Melt the chocolate, coat the balls and refrigerate until the shell has set.
These little chocolate-hazelnut balls are a real burst of indulgence.
From the first bite you find that wonderful contrast between melting chocolate, toasted hazelnut and the irresistible crunch that immediately recalls a Ferrero Rocher.
And that is precisely what I was after: recovering the pleasure and the sensations of an iconic confection, but in a fully plant-based, gluten-free version.
It is a simple recipe, but certainly not a simplistic one. Behind that apparent ease lies a good deal of work on textures and on the balance of flavors. Which is exactly what makes it interesting.
I hope you feel as much joy and satisfaction in making these as I felt in imagining and creating them.
And above all, come and tell me how it went on social media. What you make, your impressions and your comments are always an immense pleasure to read.
Because after all, that is pastry too: the happiness of creating, of sharing and of enjoying, with no compromise on indulgence.
