Petit-Beurre Cookies
The childhood cookie, made plant-based and gluten-free: thin, crisp, and far easier to get right than it looks.
A small French cookie that crosses the generations
Did you know the famous Petit-Beurre was born in Nantes in 1886? It was Louis Lefèvre-Utile, son of the founders of the LU biscuit company, who came up with the recipe and the shape of the “Véritable Petit-Beurre”, drawing in part on the craft of English biscuit makers.
With its rectangular shape, its scalloped edges and its handsome golden color, this little cookie quickly became a fixture of French afternoons. It has crossed the generations ever since without aging a day.
And with good reason: who has never dunked a petit-beurre in their coffee, their tea or their hot chocolate? This cookie, so simple in appearance, has something comforting about it — a delicate crispness, a melting texture and that gentle buttery flavor that brings back so many childhood memories.

My plant-based, gluten-free version: a real challenge
When I decided to rework this great classic, one small detail imposed itself: what do you call a petit-beurre with no butter in it?
Because let us agree, “petits-margarine” is considerably less appealing.
So I kept the phrase “petit-beurre style”, which immediately evokes the cookie we all know and, above all, that very particular pleasure of biting into it or dunking it in your coffee.
But behind that apparent simplicity lay a real challenge.
How do you recover the markers of a petit-beurre with a recipe that is entirely plant-based and gluten-free? How do you get that texture at once crisp and melting, that softness in the mouth, that delicately rich taste, without traditional butter or wheat flour?
I can assure you it was not as simple as it looks.
It took several attempts, a few adjustments and above all time to understand my dough, learn to work it and find the right balance between the ingredients.
Because when you take two of its traditional elements away from a cookie — the butter and the gluten — you have to rethink its structure, its texture and how it behaves in the oven.
And in the end, I got there.
I found what I was looking for: a deliciously crisp cookie, melting in the mouth, with that gentle, appealing flavor that recalls the petits-beurres of our childhood.
I have to admit I am rather proud of it. Because managing to rework a great classic while keeping what makes it charming is precisely what fascinates me about plant-based, gluten-free pastry.
Ingredients
- 160 g semi-wholegrain rice flour
- 30 g almond flour
- 60 g cornstarch
- 100 g margarine, 80% fat
- 62 ml water
- 100 g white sugar
- 1 g salt
- 4 g gluten-free baking powder
Method
- 1
Gently heat the sugar, margarine, salt and water until the sugar dissolves.
- 2
Let rest for about 20 minutes. Mix the flour, cornstarch, almond flour and baking powder, then add the cooled liquids.
- 3
The dough will be runny at this point. Cover and refrigerate for 1 hour 30.
- 4
Roll out between two sheets of parchment paper, freeze for 20 minutes and cut out the cookies.
- 5
Return the sheet to the refrigerator while the oven preheats.
- 6
Bake for about 12 minutes at 180 °C (350 °F) and let cool on the sheet.
Now it is over to you.
Make these little cookies, pour yourself a good coffee or tea, settle in comfortably and enjoy these small moments of happiness, alone or with the people around you.
Because in the end, indulgence is also this: simple things, familiar flavors and a few minutes of sweetness in the day.
Enjoy them, savor these small moments and above all, treat yourself.
