Tofu, Orange and Passion Fruit Salad
Tofu woken up by orange and passion fruit: a fresh, colorful starter with plenty of character.
Fully plant-based and gluten-free — a delicious meeting of sweetness, freshness and the tropics
I particularly love recipes that step off the beaten path, the ones that surprise from the first bite and show us flavor pairings we would not necessarily have thought of.
And these little glasses of lacto-fermented tofu, orange and passion fruit are a very fine example.
I am a great lover of sweet-and-savory. I love that meeting between the sweetness of fruit, its touch of acidity and more savory ingredients, sometimes lightly smoked. When you find the right balance, the result can be absolutely delicious.

In this recipe I chose to pair tamari lacto-fermented tofu, whose character and lightly smoked notes I particularly appreciate, with fine juicy, fragrant oranges and the intensely tropical flavor of passion fruit.
It is all delicately bound with a plant-based mayonnaise, lifted with a little lemon juice and lime zest that bring the extra freshness I love so much.
And believe me, it all comes together wonderfully.
The oranges bring their sweetness and freshness, the passion fruit wakes the palate with its very particular acidity, while the lacto-fermented tofu gives character and a very pleasant texture. The plant-based mayonnaise wraps it all together without masking the different flavors.
For me it is a genuinely fine discovery.
But what I also love about this recipe is how it is presented.
I strongly recommend serving it in small glasses rather than as one large salad.
That small format is exactly what makes it charming. A few bites are enough to appreciate the combination fully. You take the time to discover the different ingredients, to savor their freshness and to let yourself be surprised.
These glasses find their place beautifully on a festive table, at Christmas, at New Year, or simply at a family meal or a dinner with friends.
They bring a note of originality, color and the tropics to a starter. And I very much like the idea of offering my guests something slightly unexpected, while staying within a simple, approachable and flavorful way of cooking.
One piece of advice I care about particularly: choose very fine oranges, well ripened, juicy and above all very fragrant. In a recipe this simple, the quality of the fruit makes all the difference.
That too is what I like to show through my cooking: you do not always need a long ingredient list or hours at the stove to create something good, elegant and surprising.
A few good products, a fine harmony of flavors, careful presentation and above all a lot of pleasure in the cooking can be enough to turn a very simple preparation into a very fine starter.
These little glasses are, to my eyes, the perfect illustration of that.
