Chocolate-Zucchini Loaf Cake

A dense, moist chocolate cake whose secret is a vegetable. A good way to get some in without anyone noticing.

Gluten-free & plant-based12 small cakes

If someone had told me I would one day make a delicious chocolate cake with zucchini, I think I would have found it hard to believe. And yet it is now one of the cakes I most love making — it is that soft, that good and above all that surprising.

We are so used to cooking zucchini savory: in a gratin, in soup, sautéed or stuffed. But who would have imagined it could also become a wonderful ingredient in pastry?

That is exactly what I love about creating recipes: stepping off the beaten path, exploring new pairings and discovering that a very simple ingredient can sometimes hold very fine surprises.

And believe me, zucchini did not disappoint.

A discovery that changed how I see zucchini

When I started exploring sweet recipes with zucchini, I discovered a whole world of possibilities I had not suspected at all.

I created in particular a delicious chocolate and zucchini cream, which you will also find on my blog. And I invite you to discover my lemon cream too, another small marvel that may well astonish you.

These are recipes that show how creative pastry can be, even when you work with ingredients you would never have imagined finding in a dessert.

But back to our chocolate cake, because this one really does deserve your attention.

A chocolate cake, soft and entirely unexpected

In this recipe the zucchini plays a rather extraordinary role.

Naturally rich in water, it brings a moisture that gives a particularly tender, soft crumb. It keeps completely quiet in the eating and leaves all the room to the flavor of the dark chocolate.

To make this cake I chose a combination of simple ingredients: melted dark chocolate, chia seeds with water, peeled zucchini, wholegrain rice flour, a little starch, oil and baking powder. For sweetness I use coconut sugar or muscovado, whose lightly caramelized notes pair wonderfully with chocolate.

The result is a cake with a good strong chocolate flavor, a melting texture and a really pleasant softness.

And above all it is fully plant-based and gluten-free, with nothing sacrificed to indulgence.

That is exactly what I am after when I develop my recipes: recovering all the pleasure of traditional pastry while using other ingredients and exploring new possibilities.

The small secret so that nobody guesses the zucchini is there

There is one detail I would urge you to pay particular attention to: peel your zucchini carefully.

It is important to remove the green skin completely so that no small trace of color betrays the presence of the vegetable in your cake.

The idea is precisely to keep a preparation that looks entirely neutral, where the chocolate takes all the room.

And that is where it gets fun.

Picture having friends or family over and offering them a good slice of chocolate cake with a coffee or a tea.

They will discover a rich, tender cake, generous in chocolate… without imagining for a second that it contains zucchini.

I find that absolutely wonderful.

And I particularly love the moment when, after the tasting, you reveal the mystery ingredient. The reactions are often full of surprise and disbelief.

Because in the end, this cake reminds us of something essential: just because an ingredient seems unusual in pastry does not mean it has no place there.

What if zucchini season became dessert season too?

When the first zucchini arrive at the market in spring, and then all through the summer, we naturally think of savory recipes.

But for me, this time of year now also announces the return of chocolate cakes, little creams and all those sweet creations I so love making with this vegetable.

It is also a very fine way of cooking seasonal produce differently, of varying the pleasures and of showing that you do not need complicated ingredients to make lovely things.

I love the idea that a simple zucchini can turn into a delicious chocolate cake, able to delight young and old alike.

And what a satisfaction to be able to offer a dessert out of the ordinary while keeping what matters most to me: the taste, the texture and the pleasure of sharing.

A last word

I sincerely hope this recipe makes you look at zucchini differently.

Perhaps, like me, you will be astonished to find they can be wonderful allies in pastry.

I really do encourage you to try this cake, even if the idea seems a little strange at first. Let yourself be surprised by its softness, its richness and that fine chocolate intensity.

And above all, have fun serving it without revealing its secret ingredient straight away. I would be very curious to know the reactions around your table.

Do share what you made, your thoughts and your stories on social media or directly by email. Hearing from you always gives me enormous pleasure, and I love discovering how my recipes come alive in your kitchens.

I wish you lovely times baking, fine discoveries and above all, enjoy yourself.
