Mango-Infused Water

The soaking water from dried mango, far too good to pour away. Nothing goes to waste in pastry.

Gluten-free & plant-based

An infusion of dried mango to drink cold, more or less intense depending on how much fruit you use.

A delicious discovery, naturally fruity and with no added sugar

Some discoveries in the kitchen seem so simple that you wonder why you did not think of them sooner. This mango-infused water is unquestionably one of them.

It was while exploring raw food — cooking without heat — that I discovered the extraordinary possibilities dried and dehydrated fruit have to offer. A way of cooking that taught me to look at ingredients differently, to understand them better and above all to make the most of everything they hold, without wasting any of it.

Did you know, for instance, that dried fruit can regain a soft texture and become the base of a delicious fruit purée, a pastry preparation, or even a crufiture — that raw jam made without traditional cooking?

That is precisely what I love about this approach: rediscovering simple gestures, respecting the ingredients and letting nature surprise us.

And today I wanted to share a small marvel with you: naturally mango-scented water.

Mango water, as simple as it is surprising

The principle could not be simpler.

Drop pieces of dried mango into hot water and let them quietly rehydrate. Over time, the mango regains its suppleness and releases some of its fruity aromas into the water.

After that, all that remains is to pass the mixture through a fine sieve to separate the mango from its soaking water.

And that is where the magic happens.

You end up with a delicately fruity water, incredibly fragrant, naturally sweet and with no added sugar at all. A drink that brings out everything good about mango, without needing anything else.

Personally, I was completely won over. It is so good, so fragrant and so simple that it almost seems a shame not to have thought of it sooner.

One mango, two uses, nothing wasted

What I particularly like about this technique is that nothing is lost.

On one side you have the rehydrated mango pieces, which you can blend into a smooth purée, fold into your desserts, your layered glasses, your entremets, or turn into a delicious crufiture.

On the other you keep that wonderful fragrant water, which it would be a real shame to pour away.

In the end, from a single ingredient you get two different preparations, complementary and both very good.

That too is my vision of pastry and cooking: learning to use ingredients fully, discovering new techniques and limiting waste while still enjoying ourselves.

A drink for every season

This mango water is absolutely perfect served well chilled, especially on fine summer days.

I can picture it in a pretty carafe with a few ice cubes, on a summer table, bringing a tropical, thirst-quenching note.

But why keep it for summer alone?

Over the holidays it also makes a very attractive alternative to the usual drinks, served in nice glasses alongside an aperitif or a festive meal.

And what I especially appreciate is that it needs no added sugar. The mango brings its own sugars and aromas, which are enough to give this water its whole personality.

It does of course contain some of the sugars naturally present in the fruit, but there is absolutely no need to add more.

Back to essentials, letting the ingredients speak

You know by now how deeply I love this idea of rethinking the way we cook, discovering other techniques and showing that with few ingredients you can sometimes get extraordinary results.

This recipe is a very fine illustration of that.

You do not always need a long ingredient list or a complicated preparation to make something delicious.

Sometimes all it takes is a little water, some good dried fruit and a healthy dose of curiosity.

That is exactly what raw food allowed me to discover: another way of working with fruit, preserving its character and making the most of everything it offers.

And believe me, this mango water is now one of those small discoveries I love to share, precisely because it is so simple and yet so surprising.

Ingredients

  • 500 ml hot water
  • 25 to 50 g dried mango

Method

  1. 1

Steep the mango in the hot water for at least 1 hour.

  2. 2

For a stronger flavor, let it rest in the refrigerator overnight. Serve well chilled.

My tips

  • Use the rehydrated mango in a fruit salad, on a tart, or blended into a compote.

Over to you
