Strawberry Candies

By Emmanuelle Grillet-Aubert, pastry chef

Two ingredients, nothing more: fragrant strawberries and a little agar-agar. No added sugar — the fruit does all the work on its own.

Gluten-free & plant-based

What if a few strawberries were all it took to make a real little treat?

This version of my strawberry candies is probably my favorite. Why? Simply because it lets the full richness and aromatic power of this magnificent fruit come through.

No added sugar here, no lemon: the strawberries do all the work. Their natural perfume, their sweetness and their delicately tart flavor are enough to make an intensely fruity treat.

I especially love working with fruit this way — not trying to transform its taste, but simply revealing the best of what it already has.

A little sweet to enjoy for the pleasure of it, with nothing superfluous and nothing to feel guilty about.

Ingredients

  • 250 g very fragrant strawberries
  • 2 tsp agar-agar

Method

  1. 1

Blend the strawberries, fresh or frozen, then pour the purée into a saucepan with the agar-agar.

  2. 2

Bring to a gentle boil for 2 minutes. Divide among the molds, let cool slightly, then refrigerate for 1 hour before unmolding.

As you can see, this recipe is almost disarmingly simple — and yet the result is absolutely delicious.

It is also a lovely way to enjoy a treat without adding sugar to our day. Personally, I love this raw, natural product that keeps the whole identity of the strawberry.

These little candies can be eaten just as they are, but they also bring an original, elegant touch to your desserts. They are perfect for decorating a cake, an entremets or a beautifully plated dessert.

Which goes to show that sometimes it takes very little to create something extraordinary.

Nature already has a great deal to offer — sometimes you simply have to let it speak.
