Smoked Tofu and Pineapple Skewers

The smoke of the tofu against the sweetness of the pineapple, under the broiler. A short trip to the Caribbean.

Gluten-free & plant-based
Origin: French West Indies

When sweet meets smoky, the flavors really take off.

Some recipes come from a craving, an inspiration, a memory of a trip or simply from the pages of a cookbook. And this one is just such a discovery.

It was while leafing through my Creole cookbooks, which I never tire of, that the idea came to rework the traditional sweet-and-savory pineapple skewers.

Some recipes pair meat or bacon with this delicious tropical fruit. But you know me by now: I love reinventing classics and exploring new combinations, while favoring a plant-based way of cooking that is full of flavor and character.

So I wanted to replace those ingredients with smoked tofu, and what a fine idea it turned out to be.

The tofu, already smoked to begin with, is then lifted with a touch of tamari, the soy sauce that reinforces its savory, slightly woody notes. Paired with good pieces of juicy, fragrant, naturally sweet pineapple, it gives an absolutely irresistible contrast.

For me this is sweet-and-savory at its best.

With every bite you find the tart sweetness of the pineapple, the character of the smoked tofu and that delicious harmony that works so well.

And believe me, when I served these skewers to guests they were a real success. Everyone loved the pairing, as surprising as it is good.

But wait, because there is better still…

Serve these skewers with my sauce chien with lemon and passion fruit, and you have something quite wonderful.

That emblematic Caribbean sauce — fresh, fragrant, slightly tart and full of zip — wakes up every ingredient. The combination of pineapple, smoked tofu and this Creole sauce is simply divine.

Do look up my recipe for sauce chien with lemon and passion fruit (sheet no. 43) to enjoy this pairing fully.

And if you prefer to eat these skewers plain, they are every bit as good.

A short trip to the Caribbean

I have always had a real soft spot for the islands, and particularly for Guadeloupe, Martinique, Marie-Galante and their wonderful culinary worlds.

I love that generous, colorful, sunny cooking, which dares its combinations and plays with spices, fruit, fresh herbs and perfume.

Pineapple on its own takes us straight to the tropics. It evokes sunshine, colorful markets, fruit full of flavor and that ease of living we imagine so readily in the Caribbean.

That too is what I love about cooking: its ability to take us traveling without leaving the table.

With a few simple ingredients and a touch of creativity, you can make dishes that are original, approachable and above all incredibly tasty.

These skewers are the perfect illustration. You do not need a long ingredient list or hours in the kitchen to eat well. Sometimes all it takes is daring an unexpected pairing to create a very fine surprise.

You can serve them as an aperitif, at a meal with friends, for a summer lunch, or with some fragrant rice to make a complete plate.

I sincerely hope it surprises you as much as it surprised my guests, and that it gives you the urge to explore these wonderful island flavors in turn.

And above all, do not forget the sauce chien. If you love sweet-and-savory pairings, I think you are in for a treat.

The world is full of culinary treasures, so let us make the most of them — let us dare to discover, to taste, to share and to enjoy ourselves.
