Flourless Hazelnut and Chocolate Cookies

By Emmanuelle Grillet-Aubert, pastry chef

No flour, no eggs: hazelnut butter, chopped hazelnuts and chocolate. Here the hazelnut is the star, not the flavoring.

Gluten-free & plant-based8 generous cookies, about 50 g of dough each

An intense treat for true hazelnut lovers.

Cookies without flour… really?

I have a confession to make: when I first came across flourless cookie recipes on social media, I was extremely skeptical.

To me it was almost a contradiction in terms. How could you possibly make real cookies without using flour? How could you get back everything that makes a good cookie so good — its texture, its crispness, its generosity, and that very particular feeling when you bite into one?

Honestly, I did not believe in it. Not technically, and not in terms of taste either. It seemed completely improbable to me.

And yet my pastry chef's curiosity eventually won out. I wanted to understand, to experiment, and above all to see for myself whether this slightly crazy idea could really work.

So I took inspiration from the recipes I had found on social media, while reworking them in my own way. In particular I introduced chia seeds, which, once rehydrated, form a natural gel that binds the ingredients and gives the dough cohesion, without using eggs.

My aim was to keep the essence of these surprising recipes while ending up with a real cookie: indulgent, generous and a pleasure to eat.

And for this first adventure I chose an ingredient I am especially fond of: the hazelnut.

The hazelnut in all its glory

If you know me a little, you are probably aware that I am passionate about hazelnuts. I love their deep flavor, their natural sweetness, their character, and the incomparable richness they bring to desserts.

So picture a dough made mostly of hazelnut butter, enriched with chopped hazelnuts, generous chunks of chocolate and a touch of coconut sugar… The result is quite simply incredible.

What I particularly like about this recipe is that the hazelnut is not just a flavor added to a preparation. It is not diluted among a multitude of other ingredients that would end up muting its taste.

Here, the hazelnut is the real star. You find it in all its intensity, with a clear, powerful and wonderfully rich flavor. The chocolate comes along to accompany it, while the coconut sugar adds its lightly caramelized notes. It is a pairing I find absolutely irresistible.

And I can assure you that when I tasted my first cookies, I was completely won over.

I have since had the chance to share them with many people, and their reaction has been unanimous: they were absolutely thrilled. At the first bite came surprise, pleasure, and above all that same impression — these cookies were incredibly good.

What amused me most was their astonishment when I explained that the cookies were made without any flour. Hard to imagine when you discover such intensity of flavor and so much indulgence in a single cookie.

Which goes to show that sometimes you have to question your own certainties, even in pastry.

A nod to the history of the cookie

Flourless Hazelnut and Chocolate Cookies

The cookie as we know it today has become one of the most emblematic treats in American baking.

It was in the 1930s that Ruth Wakefield, at her establishment in Massachusetts, popularized a recipe that became famous: the chocolate chip cookie.

Ever since, the cookie has never stopped being reinvented. Crisp, chewy, thick, generously loaded, it lends itself to endless variations. But what I like about that history is precisely this freedom to create.

Because, in the end, why should a cookie necessarily contain flour?

With this hazelnut version, free of any grain flour, I am offering another way to find all the generosity of this hugely popular cookie, while letting the ingredients express their flavors fully.

My advice on choosing the ingredients

The hazelnut butter. I strongly recommend using a plain, untoasted hazelnut butter rather than one made from roasted hazelnuts. Personally I would advise against the latter here: with the large amount of hazelnut in this recipe, I prefer to keep a softer, more natural flavor, without accentuating the roasted notes any further.

The chocolate. You have two options: use regular chips, or cut up a bar of chocolate yourself into chunks, large or small. Small pieces will spread more evenly through the dough, while big shards will give lovely bursts of chocolate as you eat. Choose according to your appetite.

Total weight of the mixture: 402 g, which comes to about 50 g of dough per cookie before baking (50.25 g exactly).

Ingredients

Makes 8 generous cookies, about 50 g of dough each

  • 10 g chia seeds
  • 40 g hot water
  • 100 g plain, untoasted hazelnut butter
  • 40 g white sugar or coconut sugar (I particularly recommend coconut sugar for this recipe)
  • 2 g gluten-free baking powder
  • 120 g 100% plant-based chocolate chips
  • 10 g cornstarch
  • 80 g untoasted hazelnuts

Method

  1. 1

Make the chia gel. In a small bowl, mix the 10 g of chia seeds with the 40 g of hot water. Stir thoroughly and let stand a few minutes, until you have a gelled texture. This gel plays an important part in holding the dough together, binding the different ingredients naturally.

  2. 2

Make the hazelnut base. In a mixing bowl, put the hazelnut butter and add the sugar of your choice. Mix thoroughly. Then stir in the chia gel and work the mixture until it is completely smooth and even.

  3. 3

Add the dry ingredients and the mix-ins. Add the cornstarch and the gluten-free baking powder, then mix to incorporate them well. Roughly chop the untoasted hazelnuts — cut in half at the very least, so you keep good-sized pieces that will bring texture and richness. Add the chopped hazelnuts and the chocolate chips or chunks, then mix thoroughly so everything is distributed throughout the dough.

  4. 4

Preheat the oven to 170 °C (340 °F) and line a baking sheet with parchment paper.

  5. 5

Shape the cookies. Divide the mixture into 8 portions of about 50 g each. Take each portion in your hands and press it gently between your palms so the ingredients bind together, then form a ball compact enough to hold its shape. Place the balls on the sheet, spacing them slightly. Note one important peculiarity: unlike some traditional cookies, this dough will not spread much on its own in the heat. So you have to give it the shape you want from the start. Flatten each ball slightly with the palm of your hand to get a nice cookie shape, fairly thick and even. They will spread a little more during baking, but far less than classic cookies.

  6. 6

Baking. Bake at 170 °C (340 °F) for 15 to 20 minutes, watching the color. The time may vary slightly depending on your oven and the thickness of your cookies. Out of the oven, let them cool on the sheet for a few minutes before handling: they firm up gradually as they cool.

My tips

  • A note on planning ahead: if you do not have time to bake them straight away, you can perfectly well prepare and shape your cookies in advance, then put the sheet in the refrigerator until you are ready to bake. Very handy for organizing yourself in the kitchen.

Why is this recipe flourless?

Surprising as it may be, this recipe contains no wheat flour, no rice flour and no other grain flour. The structure of the dough rests essentially on the hazelnut butter, the chia seeds and a small amount of cornstarch.

So it is more accurate to speak of cookies without flour, but with a little starch: cornstarch is not a flour, it is the starch extracted from corn.

And naturally this recipe is also gluten-free and 100% plant-based, provided you choose a suitable chocolate and baking powder. For a strictly gluten-free diet, remember to check the packaging for possible traces of gluten as well.

A word from the Chef

I am truly happy to share this recipe with you today. Because beyond the pleasure of baking, what I love deeply about my work is this chance to discover, to test, to transform, and sometimes even to be surprised by preparations I would never have believed in.

These cookies are a wonderful example. I used to think a flourless cookie was almost a contradiction, and here I am today offering you a recipe I have already made many times and shared happily with the people around me.

And what a success! Everyone who has tasted them has been truly won over, some even amazed by their taste and their incredible richness. They absolutely did not expect such intensity of hazelnut, paired with the richness of the chocolate. That is the kind of reaction that gives me particular pleasure: watching people discover a recipe, be surprised at the first bite, and finally find it quite simply irresistible.

If you are an unconditional hazelnut lover, I sincerely believe this recipe is made for you. Because there is no question here of a biscuit vaguely flavored with hazelnut. No, this is a true celebration of an ingredient I love so much.

The hazelnut is there in all its glory, accompanied by chocolate and the delicious caramelized notes of coconut sugar. A generous, intense, almost addictive treat that I really wanted to entrust to you so that you too can make it at home.

I hope it brings you as much pleasure as it gave me during my first attempts and all the tastings that followed.

And above all, do tell me about your experience in the comments, let me know what you thought and share your own little adaptations. That is also what I love about this lovely adventure of Les Secrets d'une Cheffe: the pleasure of passing things on, but also that of talking with you around our shared passion for good food.

I wish you a wonderful tasting, and above all, enjoy.
