Strawberry and Lemon Candies

The same fruity treat, woken up with lemon and softened with agave syrup. A second version for those with a sweet tooth.

Gluten-free & plant-based

Melting strawberry candies, lifted with lemon and lightly sweetened with agave syrup if you like. This second version of my strawberry candies stays in fruity territory, but with an extra bit of zip.

Once again, it all starts with the strawberries. I recommend choosing them well ripened and, above all, very fragrant, because they are what give these candies their whole personality.

But here the lemon plays an essential part: it wakes the flavors up, brings a lovely freshness and gives that little tart kick that makes all the difference.

As for the agave syrup, it lets you adjust the sweetness gently, especially when the strawberries are a little short on sugar or perfume.

That is the whole point of this recipe: finding the right balance between the intensity of the fruit, the brightness of the lemon and a sweetness judged just so.

Ingredients

  • 270 g strawberries, fresh or frozen
  • 2 g agar-agar
  • 1 tbsp lemon juice
  • 1 tsp agave syrup, optional

Method

  1. 1

Blend the strawberries. In a saucepan, off the heat, stir together the purée, the agar-agar, the lemon juice and the agave syrup if using.

  2. 2

Bring to a low boil for 1 to 2 minutes. Pour into small molds and refrigerate.

  3. 3

Wait about 1 hour before unmolding, even though they begin to set sooner.

This second version will certainly appeal more to those with a sweet tooth, with its fine balance between sweetness and acidity.

I find it a wonderful way to show strawberries at their best and turn them into original little treats, as pretty as they are good.

And the good news is that you do not have to wait for peak strawberry season to enjoy them.

You can make this recipe perfectly well with frozen strawberries. It is an excellent way to have these fruity candies all year round.

A simple, approachable recipe that proves once again that with a few well-chosen ingredients you can create something lovely.

Because in pastry, indulgence begins above all with the taste of good ingredients.
