Chocolate Mousse — the Yumgo Version
Airy, melting, and not a single egg white. Made with Yumgo’s plant-based white, from potato protein.
Some discoveries in pastry surprise you, and some simply floor you. That is exactly how I felt when I came across Yumgo Blanc, an innovation that genuinely won me over.
And what excited me most, beyond how it performs, is what it is made of: potato protein. Who would have imagined the potato could open up such possibilities in pastry?
Until now, aquafaba — the cooking liquid from chickpeas — was one of the best-known ways to replace egg whites. Personally, I always found it rather awkward to use. You have to open a can of chickpeas or prepare the liquid yourself. And on top of that, chickpeas do not agree with me, and neither does their cooking liquid.
With Yumgo Blanc it is another story entirely. A powder, a small packet you simply keep in the cupboard, ready for the day the urge to bake comes along. No can to open, nothing to prepare in advance. You use what you need, and that is that.

For me that is a real advantage: practical, dependable and so much easier to fit into my daily work as a pastry chef.
But what impressed me most is its remarkable stability and its ability to replace egg whites in a great many preparations, with results that sometimes exceed anything I hoped for.
To introduce you to this small revolution, I wanted to start with a great classic, as simple as it is irresistible: chocolate mousse.
An indulgent, nostalgic, intensely chocolatey dessert, with that very particular texture we love so much: an airy mousse, light as a cloud, delicately melting in the mouth, creamy and full of sweetness, while still holding its shape beautifully.
And the most incredible part? Not a single egg white.
A chocolate mousse that is fully plant-based and gluten-free, with nothing at all to envy in the traditional version.
Proof that indulgence, lightness, simplicity and innovation can get along wonderfully.
Ingredients
- 140 g rice milk
- 1 capful vanilla extract, if the milk is not already vanilla
- 265 g baking chocolate, at least 53% cocoa
- 200 g water
- 22 g YUMGO Blanc powder
Method
- 1
Warm the milk and stir it into the melted chocolate, with the vanilla if needed.
- 2
Let cool for about 30 minutes, stirring regularly: the ganache should no longer feel warm.
- 3
Put your hand under the bowl — the heat should no longer bite, but the ganache should still be supple.
- 4
Whip the water and the YUMGO BLANC powder in a stand mixer: 5 minutes on speed 1, then about 5 minutes more at full speed.
- 5
The mousse should be firm. Gently fold the cooled ganache into it. Divide among your containers and refrigerate overnight.
What I love deeply about my work is discovering, experimenting, pushing at the limits and above all sharing with you the new possibilities opening up to us.
Today I am particularly happy to introduce you to an innovation like Yumgo Blanc, which speaks to the extraordinary progress made in plant-based pastry.
Being able to do without egg whites while still getting preparations this stable, this airy and this good was hard to imagine only a few years ago. And yet here we are.
This chocolate mousse is a very simple example of it, but a convincing one. And believe me, the possibilities go well beyond this recipe.
I want to warmly thank Yumgo for this fine innovation, which lets us explore new ground and keep moving plant-based pastry forward.
What I especially appreciate is that these products also come in small packets. You do not have to commit to a large bag to get started — an excellent way to discover these innovations, test them quietly at home and enjoy yourself.
You will find all the details and the link to these products in the “My equipment” section of my site.
I hope this chocolate mousse gives you as much pleasure to make and to eat as it gave me to create.
Because plant-based, gluten-free pastry is not a pastry of compromises: it is a pastry that innovates, that evolves, and that still has some wonderful surprises in store.
