Strawberry, Mango and Passion Fruit Trifle
A spoon dessert built in a glass: fruit, cream and cake in successive layers, as lovely to look at as to eat.
Some desserts bring together absolutely everything I love about pastry, and this strawberry, mango and passion fruit trifle is unquestionably one of them.
Picture a perfect balance between the sweetness of fresh strawberries, the delicately concentrated flavors of mango dried and then rehydrated, the tart intensity of a passion fruit coulis and the creaminess of a lightly vanilla-scented whipped cream.
A real burst of flavor, an incredible freshness and, for me, an enormous favorite.
This is exactly the kind of dessert I like to come back to in spring and summer, when the first strawberries arrive at the market and the temperature starts to climb. A fruity dessert, light in the mouth, generous in indulgence, where every ingredient naturally finds its place.

But beyond the pleasure of eating it, this recipe is also a chance to show you a few particularly interesting techniques.
Did you know, for instance, that you can work with dried mango by rehydrating it, giving it back its softness and bringing out all its flavor? And a small bonus: whatever you do, do not throw away the soaking water. It is deliciously fragrant and makes a fruity drink I love.
I will also show you that dried fruit, once rehydrated, can be frozen and then thawed for use in your preparations. A very practical trick that opens up new possibilities and makes it easier to plan your work.
And then there is passion fruit… ah, passion fruit. Those who follow me surely know it already: I am completely addicted. Its intense perfume, its very particular acidity and its tropical notes make it an absolutely extraordinary ingredient.
In this recipe I show you how to make a passion fruit coulis that lifts the sweetness of the mango, wakes up the strawberries and brings a wonderful contrast to the vanilla cream.
For me this trifle is far more than a simple fruit dessert: it is a real celebration of spring and summer flavors.
A dessert that lets the fruit speak fully, while bringing it that little touch of technique and creativity I love so much.
And believe me, when all these textures and flavors meet in the same spoonful, it is pure happiness.
For the coulis: 180 g fresh or frozen passion fruit, or 5 fruits; 15 g sugar; ½ tbsp lemon juice; 60 ml mango purée (fresh or frozen); ¼ tsp cornstarch; ½ tbsp water.
Ingredients
Makes at least 6 glasses
- about 150 g fresh strawberries
- 150 g dried mango
- 800 g hot water
- 100 g whippable plant-based cream (Schlagcreme, coconut or Flora)
- 10 g sugar
- ½ tsp vanilla extract
Method
- 1
Heat the coulis ingredients, except the cornstarch and water, for 3 to 4 minutes at a gentle boil.
- 2
Add the cornstarch slaked in the water and cook for another 2 to 3 minutes.
- 3
Cool, then refrigerate. Rehydrate the mango in the hot water for at least 1 hour and drain — do keep the soaking water, it is delicious to drink.
- 4
Cut the strawberries, or blend them very briefly so that pieces remain.
- 5
Whip the cream with the sugar and the vanilla. Layer the different preparations in the glasses as you like — be creative.
My tips
- Keep the mango soaking water and drink it well chilled.
If you have read this far I am absolutely delighted, and I sincerely hope you took as much pleasure in discovering and making this trifle as I took in imagining it and sharing it with you.
It is a recipe close to my heart, because it represents my vision of pastry perfectly: generous, full of freshness, giving pride of place to fruit and its natural flavors rather than trying to mask them.
I love the idea that a dessert can be incredibly indulgent, colorful, rich in sensation and made of carefully chosen ingredients. Another way of coming at pastry, where pleasure remains essential but where what goes on the plate genuinely matters too.
I hope this pairing of strawberry, mango and passion fruit wins you over as thoroughly as it did me.
And above all, I would love to hear from you. Find me on social media to tell me how it went, share what you made and give me your thoughts. Hearing from you is always an immense pleasure and keeps this whole adventure alive.
