Plant-Based Crème Brûlée

A soft, silky custard under a thin, crackling crust of caramel. Two versions, with coconut cream or rice cream.

Gluten-free & plant-based
Origin: France

It took me a long time, a great many attempts and a few adjustments before I arrived at a plant-based crème brûlée that finally satisfied me completely.

Because when you rework a great classic of French pastry, the aim is not simply to swap out a few ingredients. For me, the real challenge is recovering what gives the dessert its identity: a delicately vanilla-scented custard, a soft, melting, silky texture, and that thin crackling crust of caramel that breaks under the spoon. The contrast between the crunch of the caramel and the creaminess beneath is simply irresistible.

And believe me, reproducing those sensations without eggs or dairy is no small thing.

So I worked through different combinations of ingredients and textures to offer you today two versions of my plant-based vanilla crème brûlée: one based on coconut cream, the other on rice cream.

Both have their qualities, but I admit a preference for the coconut one. I find its texture particularly successful, with a melting creaminess that, to my taste, comes closest to a true traditional crème brûlée. Coconut also pairs very harmoniously with vanilla, without pulling the dessert away from what it is.

What I particularly like about this recipe is that we recover the main flavor markers and sensations of a classic crème brûlée while doing away with much of the technical difficulty its traditional preparation demands, not least the delicate business of cooking egg custards.

It is a genuine little feat of pastry, and one I am particularly proud of.

After so much searching, what a satisfaction to have finally found a plant-based, gluten-free alternative that honors the soul of this great French dessert.

I sincerely hope you take as much pleasure in eating it as I took in working it out.

Ingredients

For both versions

  • 167 g vanilla rice milk
  • 47 g brown sugar
  • 1 pinch salt
  • 10 g plant-based margarine, 80% fat. Also have white sugar on hand for the caramelized top (it caramelizes best); no quantity given

Coconut version

  • 167 g coconut cream and 27 g cornstarch

Rice version

  • 167 g rice cream and 19 g cornstarch

Method

  1. 1

Mix the sugar, salt and cornstarch. Slake with a little of the milk called for in the recipe.

  2. 2

Heat the rest of the milk with the cream and the vanilla until the mixture is steaming.

  3. 3

Pour over the slaked cornstarch, stir, then return to the heat until it thickens.

  4. 4

Off the heat, stir in the margarine. Refrigerate for at least 30 minutes.

  5. 5

Sprinkle with sugar and caramelize with a blowtorch, on custard that is either lukewarm or cold.

My tips

  • Avoid resting it overnight — the texture moves closer to a flan. The coconut version is my favorite.

Thank you so much for following this recipe through to the end.

I hope it finds a small place among your favorite desserts, and that it makes you want to go on exploring with me this plant-based, gluten-free pastry I so love to share.
