Fruit Infused with Lemon Verbena
By Emmanuelle Grillet-Aubert, pastry chef
Fruit that slowly takes on a lemon verbena infusion. A light, fragrant dessert you make ahead.
Fully plant-based and gluten-free — simplicity itself
Some desserts need no embellishment at all to be absolutely delicious. Desserts where the fruit is king, where a few ingredients are enough to create real feeling. And for me, these peaches infused with lemon verbena are the perfect illustration.
That is exactly what I love about cooking: this capacity to turn very simple ingredients into something delicate, fragrant and elegant, without having to overdo it.
Picture magnificent peaches, well ripened, juicy and naturally sweet, dropped into an infusion of lemon verbena delicately scented with a little lemon zest. Only a few ingredients, and yet the result is absolutely wonderful.

Lemon verbena is an aromatic plant I am particularly fond of. Its subtle perfume — fresh, lemony and slightly floral — pairs divinely with the sweetness of peach. It brings real finesse to this dessert, without ever masking the flavor of the fruit.
There is nothing complicated here. Simply make a lemon verbena infusion, fresh if you are lucky enough to have some in the garden, or dried, which works very well too. Add a little lemon zest and, if you like, some sugar. Heat the mixture gently before dropping in the peaches to let them take on all those wonderful aromas.
And I want to make one thing clear: the sugar is absolutely not essential. If you have beautiful, ripe peaches, naturally full of sun and flavor, you can do perfectly well without it. That too is what I love about this recipe: it adapts to what you want and above all to the quality of your fruit.
Because in the end, everything starts with the choice of ingredients. A fine seasonal peach, fragrant and full of flavor, needs very little to become an exceptional dessert.
I have made these infused peaches for guests, and I can assure you the reactions were extraordinary. People were astonished. They did not expect to find so much finesse and pleasure in such a simple preparation.
And that is precisely what I love: showing that you do not always need an elaborate dessert, with several preparations, cakes, creams or complex assembly, to give real pleasure.
Here there is only the fruit, the verbena and that delicate infusion lifting the whole thing.
It is also a dessert I love making ahead. You let it cool quietly, then put it in the refrigerator, where the peaches go on taking in the verbena. Served well chilled with a little of their infusion, they become a particularly pleasant treat on fine summer days.
And what a joy to open the refrigerator and find these delicately scented peaches, ready to eat at any moment.
It is a recipe you can present in nice glasses, in small jars or simply in a good deep plate with a little of the infusion. It stands entirely on its own.
This preparation also illustrates my vision of plant-based, gluten-free cooking perfectly, one in which pleasure does not necessarily depend on how complex a recipe is. It can simply come from the meeting of two ingredients that complement each other beautifully.
A last word
I sincerely hope you take as much pleasure as I do in making and eating these peaches infused with lemon verbena.
If there is one thing I would like to pass on through this recipe, it is that the simplest pleasures sometimes give us the greatest satisfaction. All it takes is good ingredients, a little care and the wish to enjoy yourself.
As always, I look forward to hearing from you, whether on my social media or directly at my email address. I love seeing what you make, reading your impressions and knowing that my recipes find their place in your kitchens.
