By Emmanuelle Grillet-Aubert, pastry chef

Flourless hazelnut shortbread cookies topped with a chocolate ganache in the shape of a little ghost. For Halloween, or just for fun.

Little ghosts to bite into, for a Halloween as delicious as it is fun.

When I discovered on social media that you could make lovely little ghosts with a simple heart-shaped cutter, I thought the idea was adorable. I would never have imagined that repurposing such a classic cutter could create such amusing cookies. So of course I wanted to try it myself.

But what particularly won me over in this recipe, beyond the shape, was the possibility of making these cookies with a hazelnut base, no flour at all and fully plant-based.

And believe me, the result is absolutely delicious.

You get all the richness of hazelnut, its lightly toasted perfume, that texture both deliciously crisp and melting… and above all the pleasure of eating a real shortbread cookie without needing flour. A fine way to enjoy yourself while naturally avoiding gluten.

And because I always like to add a little extra, I chose to assemble my ghosts with a delicious chocolate ganache, whose recipe you will also find on my blog.

And there, I can tell you, we have something quite wonderful.

Picture a sort of little sandwich cookie reworked for Halloween, with a far more pronounced hazelnut flavor, a generous chocolate ganache and that lovely ghost shape that makes you want to bite in immediately.

It is good, it is cute, it is fun… everything I love, in short.

And what I particularly appreciate about this recipe is that it can become a real moment of sharing with children. Picture them turning simple hearts into little ghosts, shaping them, sandwiching them with chocolate and discovering their creations once finished. I am certain they will love it.

These cookies will naturally find their place on a nice Halloween table, among decorations, pumpkins and all those small treats that make the occasion so cheerful.

So today I am particularly happy to share not only this recipe but also the very simple trick that turns a heart cutter into an adorable ghost. Which goes to show that in pastry, a little imagination is sometimes all it takes to make something lovely.

So for Halloween, get the costumes out, lay a fine table, have fun as a family and above all, make a little room for my hazelnut ghost cookies.

I hope they bring you as much pleasure to make as to eat.

And as always, I cannot wait to see what you make and hear what you think. Do find me on social media or write to me directly by email. Your feedback is always an immense pleasure.

Enjoy yourselves, have fun and make this Halloween a delicious moment of sharing.

With all my passion for a fully plant-based, gluten-free pastry.
